What I Eat In A Day

For the last couple of days now I’ve been really trying to eat a lot more healthy for the soul purpose that I want to feel my best, and I personally feel my best when I eat clean and healthy. Saying that, I don’t always eat healthy, I indulge at times too. But I thought that I would show you what I eat in a day, and just a reminder, sometimes I eat more clean than this, and sometimes I eat crap..

You may also notice that there is no meat or dairy in my food, and that is because I am a vegan so that means that I don’t eat any meat, dairy, eggs or honey (no food from animals). I will talk about my vegan journey with you another time, but to sum it up: I thrive on it!

Breakfast – Overnight Oats Topped With Berries

What You’ll Need:

  • Rolled Oats (As much as you want)
  • Milk of choice (I Love Almond Milk)
  • Chia Seeds (optional)

Mix the ingredients together the night before and put it in a container and let it sit in your fridge overnight, the next day it will be a delicious pudding that you can top with whatever you like. I personally enjoy blueberries and strawberries or raspberries.

 

Lunch – Pasta With Tomato Sauce

What You’ll Need:

  • Pasta of choice
  • Tomato Pasta Sauce (I used Barilla Classico), you can also make your own.
  • Salt & Pepper for seasoning (optional, you can use whatever you want)

This is pretty self explanatory, but you heat the water to a boil and then you add the pasta in the water and let it cook until it’s finished. Then I drain the pasta and put it back in the casserole and then I pour the pasta sauce over it and just heat it up together. This is so easy and delicious, to make it more healthy you can add vegetables on the side.

 

Dinner – Vegan Chili

What You’ll Need:

  • 1 can of Chili Beans
  • 1 can of crushed tomatoes
  • 1 clove of garlic
  • 1/2 yellow onion
  • 1 can of sweetcorn
  • 1 chili (optional, you can also use chili powder)
  • 1 tsp
  • 1 tsp of salt
  • Rice of choice

First off you chop the garlic in tiny pieces (as small as possible) and then you cook it in a little bit of oil in medium heat. Then you turn the heat down on very low heat and add the chili beans, crushed tomatoes, chopped onion, sweetcorn and spices. You can cook it for as long as you want, in my opinion, the longer the better. You also just cook the rice before you want to eat, and then you can either freeze it or cool it down and put it in the fridge and have it for the next day, it’s absolutely amazing!

Dessert – Watermelon, Peach and Strawberries

What You’ll Need:

  • 1 peach
  • Handful of Strawberries
  • 1/8 of a watermelon

Chop, chop, chop and there you go. A fresh and healthy dessert, just to point out, you can have any fruit you like for this, this is just what I chose to eat this day because we had it in our fridge.

 

Note: I ate more snacks in between these meals, I ate more fruit and some carrots and also I had some potato chips (oops), and one Capri-Sun. So yeah, I eat what I want in a day it varies a lot from day to day, but I try to keep it as healthy as I can, I don’t want to go too crazy with it.
